Cranberry and coconut chia pudding

Ingredients
- 6 tbsp chia seeds
- 2 tbsp coconut or greek yogurt
- 1 cup rice milk
- 1-2 tbsp honey
- Handful of organic raspberries
- Heaped tbsp desiccated coconut
- 2 Heaped tsp Arctic Power Berries Cranberry powder
- Dash of vanilla powder
Directions
- In a bowl, combine the chia seeds, rice milk, honey and vanilla and mix everything together.
- Mash in the raspberries, then stir through the berry powder and coconut.
- Adjust any sweetness to taste and set aside in the fridge for an hour or overnightto thicken.
- Serve with your favourite toppings, like another sprinkle of berry powder for extra nutrients, and enjoy!
