Lingonberry and apple porridge with wild blueberry caramel

Ingredients
Lingonberry-Apple porridge
- 100 ml water
- 100 ml plant-based milk
- 45 g rolled oats
- 1/2 apple, peeled and chopped
- 1 tbsp maple syrup or sweetener of choice
- 1 tbsp flax seeds or chia seeds
- 1 tsp cinnamon
- pinch of salt
- 2 tsp Arctic Power Berries Lingonberry powder
Blueberry caramel
- 100 ml nut butter such as cashew butter or almond butter
- 2 tbsp plant-based milk
- 1–2 tbsp tbsp maple syrup (depending on the sweetness of the milk used)
- 2 tsp Arctic Power Berries Blueberry powder
Directions
- Cook rolled oats in water and plant-based milk until creamy. Depending on the oats this might take 5-10 minutes.
- Add chopped apple and mash it in the warm porridge. Add sweetener, seeds, cinnamon, salt and berry powder.
- To make the blueberry caramel, mix all ingredients in a bowl until smooth. Use caramel as a topping for porridge, overnight oats, yogurt, smoothies or enjoy as it is!
